Zucchini Zaatar

This fermented dish is based on zucchini and red pepper fermented with the Middle Eastern spice, Zaatar.  Zaatar is a spice that tastes like basil that is used extensively in Lebanese cooking.  The fermentation produces a soft end-product with a pronounced Zaatar taste.

Ingredients:            

• Zucchini
• Red Peppers
• Zaatar

Flavor:                     Sour with a basil taste
